Spicy Quinoa Salad

My favorite go to side dish.  You can turn this fancy side to a hardy main by adding your favorite protein.

Instructions

  • 1. In a hot, medium saucepan, add the olive oil, leeks, mushrooms, salt and pepper; sauté until they sweat.
  • 2. Add zucchini, fennel, bell pepper and quinoa; cook for 2 minutes.
  • 3. Turn stove off and add anti-pasta, lemon juice, Thai basil, salt and pepper to taste. Mix and add more lemon juice, if necessary.
  • 4. Garnish with additional herbs before serving.
